Le Chablisien : The Chablis region (13)
The vineyards of Chablis are located in the Northern part of Burgundy. They are planted on gentle slopes along the river Serein. The wines from Chablis are produced in about twenty villages. The soil is made of clay and limestone.
The climate is rather cold during the winter and can reach warm temperatures during the day in summer : spring frosts are frequent and wine-growers have learnt how to protect their vines thanks to big candles or by sprinkling water.
The grape variety is exclusively the noble chardonnay grape that combines with the « terroir » in order to give the most well-known dry white wine in the world.
Many vineyards are classified as Premiers Crus (First Growths) and there are also remarkable Grands Crus (Great Growths) that can age wonderfully.
